I spent four hours trick-or-treating on Halloween, and my haul was enormous: two full pillow-case (the jumbos kind) and a pumpkin pie that my neighbor gave me.
But by the time I got home from school the following day, my stock pile was gone. My dad had gotten hold of my candy, and he went to town, devouring it all. As a result, I had the candy blues, and I needed a sugar fix ASAP.
One fall treat that provides sweet sustenance and curbs my candy craving is a nut brittle. To make this delicious treat, start off by heating a handful of any type of nut, although almond works the best, in a pan until it smells nutty. By toasting the nuts, you will intensify their flavor.
Then, take about two tablespoons of granulated sugar and one tablespoon of dark brown sugar and mix them together in a bowl with a pinch of salt. The salt heightens the flavor of the other ingredients. While the nuts are toasting, take a sheet of tin foil and shape it into a platform that you can pour the brittle onto once cool. Add the sugar to the nuts and step away from the stove to prevent the formation of sugar crystals.
If you move the pan or stir it now, sugar crystals will form and you will not have a crispy brittle. Once the sugar has liquified and browned, turn off the heat. Take the mixture and carefully pour it into the tin foil platform to allow it to cool.
However, peanut brittle is unhealthy. So if you want to have a healthier option, turn to fruit-based desserts.
